If you are asked your current salary at the job interview, do include all compensation benefits. Also if you have stock, stock options or deferred compensation, you should also mention that also. Usually, you will be asked for the last three years so they can ascertain if your growth has been consistent. If there are any large differences in the numbers, make sure you can explain why. For example, there may have been a moratorium in bonuses or an unusual bumper year.

Firstly, you should always give a salary range. If it you are interviewing for a very lateral move in the same industry, your range should include a premium for the move. If you are changing industry like going from a bank to a startup, you will need to consider the salary structure in that industry and temper your expectations accordingly.
